Rulo "Stefani"

This is one of the most popular dishes with minced meat and it is served very often at the table of every family.  


“Rulo Stefani”(meatloaf)- an absolute classic that all Bulgarians know from children!

 

Although over the years I have added one or another ingredient, I always return to the classic version of the recipe- minced meat, eggs, pickles and carrots. I love this Meatloaf, because I simply push it in the oven and then I have time to do something else.

The recipe is ideal for beginners, because it is very easy to make and there is practically nothing to go wrong and you can serve the roll with any garnish - fresh salad, boiled or baked potatoes, mashed potatoes, steamed vegetables - whatever you like and whatever you have currently available.

It is a matter of personal choice what minced meat you will use for this recipe - pork, mix or beef, as well as with what spices you will season it. If desired, you can add finely chopped parsley, grated onion or other spices. I will give you my way, and you will prepare it to your liking. :D

iNGREDIENTS:

  • 700-800 gr. minced meat
  • 1/2 tsp ground cumin
  • 1 tsp savory
  • a pinch of nutmeg
  • 1/2 tsp hot pepper flakes (optional)
  • grated onion and finely chopped parsley (optional)
  • 6 eggs
  • 2 carrots
  • 3-4 dill pickles
  • 3-4 tablespoons oil
  • 30-40 gr. of cheese for sprinkling

The preparation of ”Rulo Stefani”:

Cook the stuffing:

Put 5 eggs in a saucepan and boil them for 5 minutes, then pour cold water over them. It is best to leave them for 1-2 minutes under running cold water.

In a saucepan with salted water, boil the carrots for about 10 minutes, remove and leave to cool.

Mix the grounded meat with the spices. Add the whole egg yolk and half the egg white (part of the egg white is set aside in a bowl for later) .

Roll it:

The minced meat is shaped into a rectangle about 1 cm thick. Put the eggs, halved carrots and pickles in the center of the rectangle and then roll it. The set aside egg white is beaten with a fork and spread all over the roll. 

Bake it:

Bake the shaped roll in a preheated oven at 180 ºC for 20-25 minutes, remove, sprinkle with cheese and return to the oven for another 7-8 minutes until the cheese is done. Remove from the oven and let rest for 10 minutes before slicing and serving.
