The origin of Filipino cuisine has been from various foreigners who were interested in the food. The popularity and the spread of Filipino cuisine are due to its span of both place and time. The Philippines composes of more than seven thousand islands inserted between the Philippine Sea and South China sea. The Philippines' location is very strategic in that it lies within the path of trade and migration of people for a long time. The migration and the business led to the spread and discovery of new traditions, ingredients, and dishes.  The cuisine dishes are a mixture of sour flavors, sweet and salty. The modern Filipino food currently taken is the direct indigenous flavors fusion and influence from outside (Fernandez). The broad, rich indigenous history and geography, every area in the Philippines show these influences in a common variation of popular food.

In the Philippines' primary source and origin, dishes lie with the Malay-Polynesians were the most responsible for ingredients common in the dishes like rice. The foreigners settled in the Philippines and brought cooking and farming techniques composed of boiling, roasting, and steaming over a fire. The Chinese traders developed outposts in the Philippines' coastal cities, which made them develop the need for Filipino cuisine. Their settlement of the Chinese at the Philippines' coast brought new ingredients, new dishes, and methods adopted by the local people over time. Additionally, the Spanish conquistadors, like the Portuguese navigator Magellan privileged the Philippines for Spain in the 1500s disregarded the people who lived in the long there for several years (Fernandez). The Spanish arrival to the Philippines brought new meats and diaries, which are the dishes used to make Filipino cuisine though they were outside the upper class. The upper-class Filipinos dined on dishes impacted by traders from China.
